Paula’s Baked Rice Pudding

Ingredients
- 2 cups cooked rice
- 1 egg
- ½ can sweetened condensed milk
- ¼ cup raisins
- ½ stick Butter, melted
- 2 tablespoons vanilla
- 1½ teaspoons cinnamon
- dash Nutmeg
- turbinado sugar, to sprinkle on top
Directions
Preheat oven to 325˚F.
Put cooked rice in bowl.
Add 1 egg to a small bowl, and add a small amount of condensed milk to egg along with a small amount of cooked rice (tempering). Once mixed together, add egg and condensed milk mixture to the large bowl of rice along with the remainder of the ½ can of sweetened condensed milk. Add melted butter to the mixture and stir. Add in raisins, vanilla, cinnamon and nutmeg.
Add rice mixture to a greased baking pan or small greased oven-safe ramekins. Sprinkle the tops with the turbinado sugar.
Bake until thickened and set, around 20-25 minutes.
