Maque Choux (Cajun Fried Corn)

  • 8 ears fresh corn
  • 2 to 3 jalapeños, seeded and finely diced
  • 2 medium-sized tomatoes, diced
  • ¾ stick butter
  • ⅓ cup heavy cream


Remove kernels from ears of corn.

Melt butter in a saucepan over medium heat.

Add corn and sauté until liquid evaporates.

Add jalapeño and sauté a few more minutes.

Add tomato and give it a quick stir.

Add heavy cream and stir, cooking until liquid evaporates and thickens.
