Low Country Chicken

- 1/2 stick butter
- 4 skinless, boneless and pounded into 1/2-inch thick pieces chicken breast halves
- 1 cup sliced fresh mushrooms
- 2 tablespoons minced shallots
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 oz grated mozzarella cheese
Melt butter over medium heat. Add chicken and cook 5-8 minutes on each side, or until tender. Add mushrooms and shallots and sprinkle with salt and pepper. Cook 10 minutes.
Transfer chicken and mushroom mixture to platter and sprinkle with grated cheese. Cover and let stand for 5 minutes or until cheese melts. Serve with your favorite pasta.
