Linguini with Candied Tomatoes

Ingredients
- grated Parmesan
- fried capers
- candied tomatoes
- 2 tablespoons olive oil
- 1/4 cup white wine
- 1 tbs garlic minced
- 1/2 lb peeled and deveined shrimp
- 1 minced shallot
- 1 lb linguini pasta
Directions
Cook linguini according to package directions.
Add 3 tablespoons butter to skillet. Add shallot. Add garlic paste. Add white wine and reduce briefly. Add 1 lb cherry tomatoes, candied. Add shrimp and olive oil and cook until pink. Add pasta and a little pasta water to the skillet.
Candied Tomatoes
Plum or Cherry Tomatoes
Cut tomatoes in half and spread out on cookie sheet. Drizzle with olive oil and salt and pepper. Cook at 200 degrees for 3 hours.
