Healthy Sweet Potato & Banana Pancakes

  • 1 sweet potato
  • 2 eggs
  • ⅓ cup of your favorite milk, like oat, almond, or traditional milk
  • 2 ripe bananas
  • 1 tablespoons flax seeds
  • ¾ cup quick-cooking oats
  • cinnamon, optional
  • vanilla extract, optional


Bake the sweet potato at 425˚F for 45 minutes.

Blend together all ingredients.

Heat skillet on medium heat with coconut oil, ghee, or butter. Pour pancakes into pan, and once they start bubbling, flip them over until cooked completely.

Serve with your favorite nut butter & fresh berries.
