Casey’s Shoo Fly Pie

Servings: Makes 1 (9-inch) pie

Ingredients

Simple Pie Crust

  • 2 cups flour
  • ⅔ cup shortening
  • 1 teaspoon salt
  • cold water, as needed

Shoo Fly Pie

  • 1 cup flour
  • ⅔ cup brown sugar
  • 1 tablespoon shortening
  • 1 cup dark corn syrup
  • 1 egg, beaten
  • 1 cup hot water
  • 1 tablespoon molasses
  • 1 teaspoon baking soda

Directions

Simple Pie Crust

Cut together the flour, shortening, and salt. Add cold water with a fork until dough clings together and is moistened. Roll on a floured board. Makes 2 crusts.

Shoo Fly Pie

Preheat oven to 375˚F.

Mix together 1 cup flour, ⅔ cup brown sugar, and 1 tablespoon crisco. Reserve ½ cup of crumb mixture and set aside.

To the remaining crumb mixture add 1 cup of dark corn syrup, 1 egg (beaten), ¾ cup of hot water, and 1 tablespoon of molasses. Mix together.

Add 1 teaspoon of baking soda to the remaining ¼ cup of hot water. Add promptly to the mixture.

Pour mixture into pie shell. Add reserved crumb mixture to the top. Bake for 35-40 minutes.

Cook’s Notes: The hot water-soda mixture should be promptly added to the mixture. Pie should have a layer of “goo” on the bottom and cake on the top.
