Cajun Rice Dressing (Dirty Rice)

Ingredients
- 2 tablespoons Vegetable oil
- 1 pound ground chuck
- 1 pound ground round
- salt, to taste
- Black pepper , to taste
- 1 large onion, diced
- 1 red bell pepper, diced
- 4 cloves garlic, minced
- 1 (10.5-ounce) can cream of chicken soup
- ½ cup water
- 4 cups cooked steamed rice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons Cajun seasoning
- ½ teaspoon cayenne pepper (optional)
- green onions, chopped (for garnish)
Directions
In a large skillet, add 2 tablespoons of oil over medium heat. Add the ground beef and seasoning with salt and pepper. Cook beef until browned, breaking it apart with a spatula. Drain excess fat if necessar
Add the diced onion and red bell pepper to the skillet with the beef. Cook for about 5 minutes, or until the vegetables are softened. Stir in the minced garlic and cook for an additional 1-2 minutes or until fragrant.
Add the cream of chicken soup to the skillet, stirring until well combined. Allow it to heat through. Add ½ cup of water or more depending on texture. You want it to resemble a stew like texture, not a thin soup.
