As you all know, Paula has lost an incredible 40 pounds. She eats lighter than she used to, while still occasionally indulging in some of her classic favorites. Paula isn’t alone though. As people are looking for ways to eat lighter, many families have been practicing “meatless Mondays,” where they eat a vegetarian diet one day a week. Paula may not practice meatless Mondays, but she has started to eat more plant-based meals.
