We love weeknight chicken dinners, don’t y’all? Chicken is one of our very favorite proteins to make during the week because it’s easy to prep, easy to cook, and so versatile! Chicken can be cooked in a million different ways. We can fry it, roast it, or grill it. We can put it in a casserole or a soup. We can wrap it in bacon, stuff it with cheese, or smother it in sauce. Versatile just doesn’t really seem to cover it, does it?
Chicken breasts are also one of the more affordable proteins out there. And most grocery stores sell already-cooked rotisserie chickens, which can serve as a great starting point for tons of weeknight chicken dinner recipes.
Lastly, we love that chicken is a healthy, lean source of protein. Obviously, it can be prepared in less-than-healthy ways, but it’s at least a healthy starting point.
