1 cup golden raisins
2 1/2 cup diced green tomatoes
1/2 teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon baking powder
1 1/4 teaspoon ground cinnamon
3 cup all-purpose flour
3 large eggs
2 1/2 cup sugar
1 cup (2 sticks) butter, softened
1 cup chopped walnuts
Browned Butter Icing, recipe follows
Browned Butter Icing:
1/2 cup (1 stick) butter
1 cup confectioners’ sugar
Preheat oven to 350 degrees F. Grease and flour a 12-cup bundt pan.
Beat butter and sugar with an electric mixer until creamy. Add eggs, 1 at a time, beating well after each addition.
In a medium bowl, combine flour, cinnamon, baking powder, salt, and nutmeg. Gradually add to butter mixture, beating well. (Batter will be soft.) Stir in tomatoes, raisins, and walnuts. Spoon batter into prepared pan. Bake for 70 to 75 minutes, or until a tester inserted in center comes out clean. Let cool in pan on wire rack for 10 minutes. Remove from pan, and let cool completely. Spoon Browned Butter Icing over cake.

Browned Butter Icing:
In a medium saucepan over low heat, melt butter. Cook 6 to 8 minutes, or until butter is lightly browned. Whisk in confectioners’ sugar until smooth.

Dear Mrs. Dean, Charlie and I are big fans of yours and we also have diabetes, and I do a lot of cooking myself, some of which my Mother taught me. By mistake of dropping a dozen hard boiled egg yolks on the floor, I had to improvise with something for my Deviled eggs and came up with substituting a cooled, mashed baked potato for the yolks. It was a great hit with my nurses in the Cardiac unit of which I worked in Tulsa. Thought you might try these and see what you think. No cholesterol. Taste like potato salad. This cake is amazing! The second time I made it I used dried cranberries instead of raisins and added a little coconut. Yummy!

I kind miss you on TV. first time I got your recipe of the green tomato I made it it tast pretty good ; only thing it was to much for to people I give half to my friend she said it was good. will I hope hear from your you email let me if you got my comment about your recipe. Wonderful. I took this cake to a party and it was a great hit. Everyone was asking for the recipe and several took a peice home with them to eat later. My husband will be asking me to make this one again, you can be sure of that!

Our family loves this recipe! It sounds very strange, but it is SO good! It reminds me of a really good spice cake and the tomatoes take on the characteristics of raisins.
