2 tablespoon butter
1 tablespoon olive oil
1 Vidalia onion, minced
1 clove garlic, minced
2 bunches spinach, stemmed and chopped
salt and freshly ground black pepper to taste
1/4 teaspoon freshly ground nutmeg
1/4 cup heavy cream
In a medium saute pan over medium-high heat, melt butter and then add the olive oil. Mix in the onions and garlic; cook for 2 minutes until soft. Add the chopped spinach and warm through. Add the salt, nutmeg and the heavy cream. Mix well. Cook until liquid reduces by half, roughly 3 to 4 minutes.

This recipe is simple and it is delicious! I highly recommend making this
. Here are a few tips: Since I couldn’t find “bunches” of spinach, I used the bagged salad spinach, and used 3 bags (I think they are 6oz bags). That made about 5 or 6 servings. I just chopped the spinach a little before cooking it (since the bagged spinach is already washed and the stems are small you don’t have to remove them), and then it was a little watery when everything looked done so I added some flour to make it thicker (kind of how you would thicken up gravy). You also don’t need the olive oil in addition to the butter in my opinion. Also, I find the onions to be delicious but if you are not an onion lover you might want to cut back or pick a small onion (or just use a shallot).

It feels good to watch a show that does not mention calories. I figure if your gonna eat,eat. of course we dont want to over eat,but we should enjoy eating our food with butter.
