1 1/4 cup all-purpose flour
3 tablespoon sugar
2 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
2 large eggs, separated
3 tablespoon butter, melted, plus 4 tablespoons, divided
1/2 cup miniature semi-sweet chocolate morsels
maple syrup, for serving
Cinnamon Cream:
1 cup heavy whipping cream
1/4 cup confectioners’ sugar
1/4 teaspoon ground cinnamon
Preheat griddle to 350 degrees F.
In a large bowl, combine flour, sugar, baking powder, and salt.
In a small bowl, combine milk, egg yolks, and 3 tablespoons melted butter; add to flour mixture, whisking until smooth.
In a small bowl, beat egg whites at medium-high speed with an electric mixer until stiff. Gently fold into batter. Gently fold in chocolate morsels.
Melt 2 tablespoons butter on hot griddle. Ladle about 1/4-cup batter for each pancake onto hot griddle. Cook pancakes for 2 to 3 minutes, or until tops are covered with bubbles and edges look cooked. Turn and cook the other side. Repeat procedure with remaining 2 tablespoons butter and remaining batter.
For the Cinnamon Cream:
In a medium bowl, beat cream at medium-high speed with an electric mixer until thickened. Gradually beat in confectioners’ sugar and cinnamon, beating until stuff peaks form. Cover and chill.
Serve pancakes with Cinnamon Cream and maple syrup.

I needed a recipe for blueberry pancakes, but I couldn't find one that looked good... So I substituted 1/2C of canned blueberries for the chocolate chips in this recipe, added 1T of brown sugar and 1/4t of almond essence. These were THE best pancakes I have ever made!

These are incredible pancakes. A friend made them and left the chocolate chips out, put in 1/4 tsp lemon zest, and (in the cream) substituted the cinnamon with 1/4 tsp pumpkin pie spice. They were wonderfully-fall-tasting. Next, I will try it exactly as the recipe is written.

Paula, these are absolutely THE BEST pancakes I have ever eaten, bar none. I made a batch,(substituted buttermilk for the milk) and boy were they good! Even my nephew, who is a very picky eater, said "these are the best chocolate chip pancakes I've ever had!" That's saying something, coming from that boy! Thanks for another great recipe. You are one the best!

These are the best pancakes I've ever had. We put Chocolate Chips in the ones for our daughter and pecans in the ones for the "grown ups". This is a must try for any pancake lover.

I didn't make the cinnamon cream so I can't comment on that, but I will comment on the pancakes. My 10 year old daughter and I saw Paula make these on her show and I decided to try them today. My daughter was thrilled. They are wonderful and easy. They were actually quite light and very fluffy. As an adult, I didn't think I'd like the chocolate chips but I was wrong. These pancakes are great without syrup. If you prefer to leave out the chocolate chips, they are still great without them. I plan to use this recipe as a base to make lots of variations. No more box pancakes for our house!
