Aunt Peggy’s Cucumber, Tomato and Onion Salad Aunt Peggy’s Cucumber, Tomato and Onion Salad


Servings: 4 to 6 servings
Prep Time: 15 min
Difficulty: Easy

Ingredients Add to grocery list

1 pound cucumbers (about 2 cucumbers), peeled and thinly sliced
1 pint cherry tomatoes, halved
1/2 Vidalia onion, very thinly sliced
2 tablespoons chopped fresh parsley leaves
1 tablespoon apple cider vinegar
1 tablespoon olive oil
Salt and freshly ground black pepper

Directions

In a large serving bowl, toss together the cucumbers, cherry tomatoes, onion, parsley, vinegar, olive oil, salt, and pepper, to taste. Let the salad stand for 10 minutes before serving.

This salad reminds me of the one my mother made. Delish!! I am still a big fan of your recipes and magazine. Black or white , everyone of us has said something, that in hindsight we wish we had not. I believe you are a good person Paula, and I also believe that the media love to crucify successful people. You still have a huge fan base and I know you will make it through the blown up hype and come back, like Martha Stewart did.

I am very disappointed that Paula Deen will not be at the book signing on August 28 in Savannah, GA. I plan on attending. She helped put Savannah on the map and I would love to see her in person. I have all of her cookbooks and I fell in love with her infectious personality and that country accent. I bought her books not cause she was white but cause she can cook. Love is colorless. We all have made mistakes and have said things in the comforts of our own homes that if someone ever knew, they might look at us differently. I have a great sweet pickle recipe of my mothers that takes 7 days to make. I find canning heat very oppressive in my house no air conditioning and only 1 small window. Do you have any idea if I might be able to freeze them instead of canning, the recipe makes about 5 quarts and everyone goes crazy for them. I did not make any last year and they were greatly missed at all the holidays. I usually do 3 batches - 1 in quarts and 2 in pints.
