Mashed Cauliflower Recipe by Paula Deen

  • 1 medium head cauliflower
  • 1/3 cup chicken broth, warmed
  • 2 tablespoons reduced fat sour cream
  • salt
  • pepper
  • fresh chives, thinly sliced, for garnish


Place the cauliflower florets in a microwave-safe bowl with 1/4 cup water, cover with plastic wrap and microwave for 3 to 5 minutes, or until completely tender.


Place the cooked cauliflower in a food processor. Add chicken broth, sour cream, salt and pepper; puree until smooth. Serve garnished with sliced chives.

Reply to Jacquelyn. Just having made this, I would say no to buttermilk. As far as reduced anything, buttermilk in my market is always made with 2%'ve got a reduction right there. And seriously, 2 tbs of regular sour cream is not a killer. Consistency of buttermilk not the same as sour cream...I think you'd have very wet mashed cauliflower. This is a great recipe...really enjoyed it with my turkey meatloaf.

I couldn't resis

I couldn't resist dressing it up a bit...toasted some fine bread crumbs, threw in paparika and a bit of cayenne pepper and sprinkled over the top. For good measure tossed on a bit of Mexican four cheese shreds and ran it under the broiler to melt. Wish I could post a picture. Looks good enough to eat!

My husband loved this. Nice change from starchy potatoes and probably healthier too. This sounds like something you sweet Bobbie would make. :-)

Am going to try

Am going to try this but wish your site offered easier and shorter way to print these recipes, like a go to "print" bar, this recipe and the one for sour cream pound cake had to be printed onto two pages and both are more than short enough for one page! Let's save some papers and trees in the process here people!!!
