Magical Peanut Butter Cookies

Ingredients

  • 1 egg
  • 1 cup sugar, or equivalent amount sugar replacement
  • 1 cup peanut butter, creamy or crunchy
  • 1 teaspoon vanilla extract

Preparation

Preheat the oven to 350°. Grease a large baking sheet.

 

In a mixing bowl, combine the peanut butter, sugar, the egg and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar. Cool slightly before removing from pan.

I have been maki

I have been making these for years..the softness of these cookies are to be expected! However, I have tried rolling them in sugar then putting them on the sheet and criss-crossing with the fork, baking until brown around the top and side edges (you can smell them when they are done)... My mother-in-law requests these along with monster cookies!!

I made thee & di

I made thee & didn't get good results. They were too soft .I see there is no flour here. I am wondering if they would be better with flour? Maybe I did something wrong? Love you Paula!
