Cheeseburger Meatloaf Recipe by Paula Deen

Ingredients

  • 1 lb ground beef, lean
  • 1/2 small Vidalia onion
  • 1 large egg
  • 1/2 cup quick-cooking oats
  • 1 (8 oz) can diced tomatoes, drained
  • 1/2 lb bacon, cooked and chopped
  • 1 cup sharp cheddar cheese, grated
  • 1/4 cup ketchup, divided in two
  • 1/4 cup mayonnaise
  • 1 tablespoon yellow mustard, divided in two
  • 2 tablespoons brown sugar
  • 6 slices white bread
  • salt, to taste
  • black pepper, to taste

Preparation

Step 1

Preheat oven to 350°.

Step 2

Combine ground beef, onion, eggs, tomatoes, oats, bacon, cheddar, 1/8 cup ketchup, mayonnaise, 1/2 tablespoon yellow mustard, salt and pepper in a large bowl.

Step 3

Line a medium casserole dish with 6 slices of white bread. Shape the meat into a loaf shape atop the bread.

Step 4

In a small bowl, combine the remaining 1/8 cup ketchup, 1/2 tablespoon mustard and 3 tablespoons brown sugar.

Step 5

Spread the ketchup, mustard and brown sugar mixture across the top.

Step 6

Bake for 40 - 60 minutes, remove from oven. Let cool for 5 minutes before slicing.

I made this for

I made this for my family today. I altered the recipe a bit, switching out where it called for ketchup with tomato paste mixed with diced tomatoes. I mixed yellow and Dijon mustard (half-half) and added a tablespoon of crushed garlic and a pinch of basil to the meat.

The consensus was unanimous. Five stars!

My mother told me that I am in charge of making the meatloaf from now on. My husband said it was the best he had ever tasted. I also served biscuits and cheesy potatoes (the cheese sauce taken from Paula's Pimento Mac and Cheese recipe here: http://www.pauladeen.com/pimento-mac-cheese).

My husband state

My husband states that this recipe is why he fell in love with me!
He requested it as his last meal before leaving for deployment and the first meal he wanted when he came home!
I substitute bread crumbs because they are what I have readily available on my counter.
It's a great, easy dish that I have to make at least once a month with mashed potatoes and a fire roasted corn/tomato salad. If I don't, a riot will erupt in my house!
This was the first Paula recipe I tried years ago and not my last. I made it for my very culinary-snooty aunts and they all demanded the recipe.
