Strawberry Cobbler

In this issue of Cooking with Paula Deen Magazine it’s berry time. Paula just loves this Strawberry Cobbler recipe. So simple and flavorful with the perfect crunch on top! She used a homemade vanilla sugar for an extra special touch when she made it the second time. Like Paula always says, take a recipe and make it your own. Enjoy this and all the delicious recipes in each issue.

Strawberry Cobbler
makes 6 servings

12 cups sliced fresh strawberries (about 4 pounds)
½ cup sugar
2 tablespoons cornstarch
2 tablespoons water
¾ cup firmly packed brown sugar
¾ cup quick-cooking oats
½ cup all-purpose flour
½ teaspoon ground cinnamon
½ cup butter, softened


Preheat oven to 350º F.

In a large saucepan, combine strawberries and sugar. Let stand for 30 minutes. Cook strawberry and sugar mixture, stirring frequently, over medium heat for 5 minutes.

In a small bowl, combine cornstarch and water until blended. Stir cornstarch mixture into strawberry mixture. Bring to a boil over medium heat; boil for 1 minute or until mixture is thickened. Spoon mixture into 6 (5 ounce) ovenproof ramekins.

In a medium bowl, combine brown sugar, oats, flour and cinnamon. Using a pastry blender, cut in butter until mixture is crumbly. Divide mixture evenly over strawberry mixture. Bake for 25-30 minutes or until browned and bubbly. Serve warm.

I just made this yesterday. I don't have 6 custard cups so I put all the ingredients in a pie dish and it looked do pretty. Also I used raw sugar instead of granulated sugar. Lastly, I didn't use 12 cups of strawberry, I felt like that was too much so I used like 4 or 5 cups. Oh yeah one more thing ,I Iayed half of the crumbly mixture on the bottom of the dish and put the strawberries evenly on top then put the rest of the crumbly on top. And i think it's better like that . I give this recipe 5 stars for its amazing taste and easiness for a beginner like me. Thanks Paula smile

I love recipes from Paula's magazines. I have tried serveral and they have been delicious. I tried this strawberry cobbler recipe but I cut it in half because 12 cups of strwberries seemed too much. I have never cooked strawberries so I thought they would cook down alot but they didn't. I had to use a 1.5 qt deep baking dish with the six cups of strawberries becuase it looked like the berry mixture would not fit into the 6 5oz dishes. Did I do something wrong or should you have a lot of mix left over? It still tasted great though. Thanks.

I like getting recipes from Paula , she cook like I was brought up on back in Missouri. My Grandmother Audrey, would spend the day in the kitchen making Breakfast, Dinner, Supper for my Grandfather and it was some of the best memories I have of both my Grandparents.  She was a phenomenal cook and Grandmother…Thanks Paula!!!
