Ingredients:
1 (18 1/4-ounce) package yellow cake mix
1/2 cup reduced-fat buttermilk
1 egg, lightly beaten
1 tablespoon canola oil
Filling
1 (8-ounce) package reduced-fat cream cheese (Neufchatel)
3/4 cup confectioners’ sugar
1/4 cup plain low-fat (2%) Greek-style yogurt
1 large egg, at room temperature
1 teaspoon vanilla extract
1 teaspoon melted butter
Directions:
Preheat the oven to 350°F. Spray a 9 x 9-inch baking dish with nonstick spray.
Place the cake mix in a large bowl. Whisk together the buttermilk, egg, and oil in a small bowl until blended. Add the buttermilk mixture to the cake mix, stirring just until blended. Pour the mixture into the baking dish.
Beat the cream cheese until smooth. Beat in the sugar, yogurt, egg, vanilla, and butter. Spread over the cake mixture. Bake 40 – 50 minutes. You want the center to be a little gooey, so do not over bake.

I prepared the cake part but then threw it away. It was not pourable and would not spread evenly in the pan. Am I supposed to prepare the cake according to the box then add the buttermilk etc?

i wish i was your dauthter your food is excelent tell your family hi for me and have a great life and may god bless you all .i cant aford to go to your returant yet but one day ill be there .i have a recepy that you can try in a pinch 2 graham crust or shortbread eight contaner of cool whip normal size 1can of crush pinapple lage box of vin,oudding dry pour all in bowl mix pour into crust .and refridge 2hours then eat.

Dear Paula, I agree with Jan Nolan (7/31/12) I also am prediabetic and have gained considerably. I live in a 55+ independent apartment complex and out of the 46 here there are 21 prediabetic and 9 who have diabetis. Please consider the cookbook I know we all would love to buy one. All live alone except for 4 couples thoughout the complex. So a healthy small portion cookbook would wonderful. LYLAS (love ya like a sister).MEK

Dear Paula, I have always admired you for being just who you are. You never let critical people take away your kind, sweet attitude! One thing I would like to ask is: Could you come up with a Diabetic Cookbook? Even better would be menus for us who cook very little and LOVE food but don't want it to be the only focus in our lives! I have gained a bunch of weight lately and have discovered that I am prediabetic. I am finding out that some of my friends are also. I love to read but my personal library has more Cookbooks and diet books than most people! If someone (YOU!) could combine the diet plan and starter menus (say 6 weeks )with recipies. This is basically what we call Chess Bars. My mother has been making and has sold these at every school function in the county over the years. Plenty of money made...lol. My sister works for the state and has, on occasion, taken these to state functions with the Governor. Regardless of whose recipe we use, this is delicious. The only thing to make this recipe better is a tall glass of cold milk. Keep up the good work as long as the South keeps cooking with butter, we will rise again and again.

Pillsbury makes a great sugar free yellow cake mix. Using this in the recipe for gooey butter cake would even be fewer grams of sugar. They also make chocolate, devil's food and brownies. I have tried them all and they are delicious. When I have substituted them no one knows its' sugar free and usually I don't tell them.

If ever you are getting rid of your pots and pans, please send them here. I am not very financially well off, in fact, I am somewhere in the poverty level according to the state's statistics but I keep up with you and your boys as much as I can. I have children that I raised alone and I am a widow 2 times over. All my family is gone and helping to raise my grandchildren. It seems the men in our family do not stick around long. Your recipes if I follow them to the letter come out just like yours. I think you did a good thing coming out about being diabetic and expect your diabetic recipes to be just as yummy as your butter ones. I rank you up there with Bobby Flay and Emeril, you are that good and your personality over shadows them all. I hope you get my email because I want you to know you have a real fan in us.

I love Bobby's new show the only problem is around here it only comes on Sunday @ 12:30. Paula, you taught those boys nothing but goodness. By the way if you ever happen to get ready to throw away a set of those measuring cups or spoons just send them to 38243 Millsboro Hwy. Millsboro, DE to me. I am afraid that is the only way I will get them. Unless I find me a nice lovable man. When I was in Savannah, hoping to get a glimpse of you or the boys I went on the Paula Dean Bus Tour to Bubba's, went to the store twice and ate at the Resturant twice. Where ever I was you were the other place. That is the luck I have. But maybe someday I will have the honor and pleasure to do so. Bobby, thank you so much for lighter recipes. My whole family is trying to drop some weight and I had a gastric sleeve surgery and cannot eat some of the wonderful recipes your mama came up with (very sad).
