Ingredients:
3 strips center-cut reduced-fat bacon, chopped
1 onion, diced
1 jalapeno, seeded and diced
1/4 cup all-purpose flour
1 (32-ounce) container chicken stock
2 russet potatoes, cubed
1/2 teaspoon salt
1 (16-ounce) package frozen baby gold and white corn kernels (3 cups)
1 cup fat-free milk
3 tablespoons fat-free half-and-half
1/2 cup reduced-fat shredded Cheddar cheese
2 tablespoons chopped fresh cilantro
Directions:
Spray a large nonstick saucepan with nonstick spray and set over medium-high heat. Add the bacon and cook until browned, 2 – 3 minutes. Transfer the bacon to paper towels to drain.
Add the onion and jalapeno to the saucepan. Cook, over medium-high heat, stirring occasionally, until the onion is tender, about 5 minutes. Stir in the flour; cook 1 minute. Add the broth, potatoes, and salt; bring to a boil. Reduce the heat and simmer, covered, until the potatoes are tender, about 12 minutes. Add the corn, milk, half-and half. Cook 1 minute. Remove from the heat. Stir in the cheese and cilantro; sprinkle with the bacon.

I make a mean light Chicken Corn Chowder inspired by the Amish in Pennsylvania where I grew up. Every time I visit my Mom I have to make a big pot for her. She freezes it and eats all year. One trick is using fresh corn cut off the cob, you get more starch out of it then and you can use less cream for thickening.

This turned out great!! I love Paula's recipes but am trying to cut back on calories. Thanks for the low-cal revisions. I did add red bell pepper and a bit of ham instead of bacon.

Tried it with the crawfish and it was fantastic!!! I had to add more seasoning but living in Louisiana that isn't unheard of with many recipes! Thanks for the lighter versions of your mom's recipes!!!It's nice to eat something that tastes like you are eating the real thing!!!!!!!!

My daughter and I travelled to Florida on December 17 and stopped in Georgia on Sunday Dec 19th and had the buffet at 11:00 am and we both really enjoyed it. Prior to the buffet we shopped at Paula's store and of course we bought lots of things to bring back to Canada. We were only wishing we could see Paula but still I was at the restaurant and store. I enjoy your healthy recipes. I love your Mom and you. What a wonderful family!!!. I had the pleasure of meeting you,in front of Gilligan's store june of last year. I ate at the resturant it was wonderful. That was the biggest crabcake I've ever seen. The chocolate torte w/rasberry sauce was to die for. You're a doll and so very sweet. I was watching you and your mom today what a cute story about the olives. It would be a dream come true too cook with you and your mom. I watch your mom everyday.

Hi Paula, This sounds delicious, but I make the "old fashioned" kind with less fat. I dice 1 or 2 potatoes and 1 onion and boil, with just enough water to cover them. When the potatoes are tender I add a packet of "Butter Buds", a can of creamed corn and 1 or 2 cans of fat free canned milk. Add salt and pepper to taste. That's it...fast and simple!! It's my comfort food..just like my grandma used to make. This serves approximately 2 people, but I usually eat most of it myself!! You're recipes are the greatest...thanks for letting me share mine!! Try this...melt 2T butter in saucepan. Add 1/4 cup shredded carrots. Stir over med heat till glossy. Add 1 bag frozen sweet corn. Add 1 bag frozen broccoli florets. Add 1/2 cup water. Cover and cook till just tender. Add 2 cans cream of potato soup and 2 cans of milk. Remove from heat and add 1 to 2 cups shredded medium cheddar cheese. Stir till cheese is melted. Add salt and pepper to taste and ENJOY!! Fast and easy!
