Southern Fried Chicken Recipe by Paula Deen

  • Paula Deen's House Seasoning
  • 2 1/2 lbs chicken, cut into pieces
  • 2 cups self-rising flour
  • 1 cup hot red pepper sauce
  • 3 eggs


Heat the oil to 350° in a deep pot. Do not fill the pot more than 1/2 full with oil.


In a medium size bowl, beat the eggs. Add enough hot sauce so the egg mixture is bright orange (about 1 cup). Season the chicken with the House Seasoning. Dip the seasoned chicken in the egg, and then coat well in the flour. Place the chicken in the preheated oil and fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. Approximate cooking time is 13 to 14 minutes for dark meat and 8 to 10 minutes for white meat.

I am a 65 years

I am a 65 years "Old-fart", and I grew-up with my mama teaching me how to cook from about the age of six. She said when you find someone to love, sometimes THAT person may not KNOW how to boil water. But she fixed the possibility of my starving from 'love' by making sure her baby-boy KNEW how to cook SOUTHERN. She was from Arkansas, and they KNOW how to cook proper; non of that northern pot-boiled stuff. Although, I got to admit some of the chefs up here in MA really DO know how to cook. It just ain't 'SOUTHERN'.

Mama just used the Crisco in a can, some salted & peppered eggs for the dredgen, and Adluh flour. People say my (Mama's) fried chicken is THE best. And then I cry a bit for Mama.

I have tried it

I have tried it and we are in love with it. My wife and I will still go to "Lady and Sons " for the fried chicken, and Mac and cheese
