Zucchini Bread

Zucchini Bread Zucchini Bread Recipe Courtesy of

Servings: 2 loaves

Cook Time: 1 hour

Ingredients Add to grocery list

2 cup grated zucchini
1/3 cup water
4   eggs, beaten
1 cup vegetable oil
3 cup sugar
1 teaspoon ground cinnamon
2 teaspoon baking soda
1 teaspoon ground nutmeg
1 1/2 teaspoon salt
3 1/4 cup all-purpose flour
1 teaspoon lemon juice
1 cup chopped walnuts or pecans





Preheat oven to 350 degrees F. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredients into dry, add nuts and fold in. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean. Alternately, bake in 5 mini loaf pans for about 45 minutes.

best ever-believe me-I did mix brown sugar as one cup of the white sugar, gave it a great glossy and crunchy outside, a little cream cheese on a slice-my oh my!!

LOVE THIS RECIPE!!!!It is so moist and maintained perfect texture in a ziplock bag on the counter for over 1 week! This recipe will be perfect for gifting at Christmas time since it can be made a day or two ahead with no worries about drying out.

I have made this several times now. I substitute one cup brow sugar for one cup white sugar. Its delish! I also use my muffin pan instead of the loaf. Wonderful, and it doesnt take as long to bake.

This is the best zuccini bread recipe. Everyone loves the hint of lemon. Made them in mini stone ware that I never used before they look great. Have bake sale coming up will make thus recipe then. Will make your Chocolate zucchini bread for the sale. Yummmm to summer!

Paula, I'm making your zucchini bread recipe, and have a question. I'm thinkin' two cups of sugar should be adequate, not three. If I cut the sugar back to two cups, do I need to substitute anything else in place of the 3rd cup of sugar. Thanks "Sugah"! Gary

Love love love it. Perfect everytime. I only add vanilla just because I can. I have also used a combination of zucchini or summer squash with apple and is perfectly delicious. Paula this is one of those recipes that complete me.

I made this recipe today, in two different batches. Just as other reviewers have said- the middle of the bread sunk in and stuck to the pans horribly. I followed the recipe exactly, both times and sprayed my pans.First batch I did two regular loaf pans( 1 glass and 1 metal ) The second time I did all mini loaves, It didn't matter what I used - it sunk in the middle and stuck to the pans, also it was hard on top and soft inside but crumbled and fell apart.What a waste of my time and money. I have nothing to bring to my potluck tomorrow.Very dissapointed!

Paula, this is the best tasting bread ever! I started using your recipe 3 years ago and I now have to grow zucchini so I can make this bread. I end up with about 20 loaves by the end of summer, which my entire family loves.

This is the best recipe I have ever found for Zucchini Bread. A friend of mine grows wonderful zucchini and I use this recipe every time. He now gives me extra in exchange for my bread. My whole family loves it. My Brother-in-law is anti-vegetable, and he has several slices every time. Of course, no one has told him there is zucchini in it. LOL

I love all of Paula's recipes but was disappointed in this one. It sunk in the middle, was hard on the top (10 minutes before it was supposed to be done), and it stuck to the pan even though I had sprayed it with Pam. Any ideas as to what I might have done wrong?

This is the best Zucchini Bread Recipe Ever!! My father in law always had a huge garden with lots of Zucchini's. I made this for him every year to take deer hunting. He's gone now, but he loved this bread Paula. We all do! Everytime I make it now I think of him. Thanks for the memories, he was a wonderful man.

This recipe rocks!! I had such a large zucchini that I was able to make 2 batches (4 loaves). They were gone w/in 2 days, between my home & work! The top was slighty crunchy where the inside was moist & FLAVORFUL! They came out of the pans perfectly each time! They reminded me of a perfect fall day!! Today I'm actually going to try the same recipe, but with bananas! Great recipe Paula!!

This is absolutely the best zucchini bread I've ever baked. however, no matter how many times I bake this yummy bread, it always falls in the middle so that my loaf cake looks like the letter "M". Am I taking them out of the oven too soon or what?
