1/4 teaspoon pepper
1 teaspoon Paula Deen’s Lemon-Pepper Seasoning
1/2 cup mayonnaise
2 teaspoons Paula Deen’s Silly Salt
1 cup celery, chopped
4 hard-boiled eggs, chopped
2 celery stalks
2-3 tablespoons chicken stock
1 onion, quartered
Salt and pepper
1 3 lbs chicken
1 loaf of bread
1 purple onion
1 red tomato
1 bundle of spinach
First, using a medium sized stock pot, boil your eggs with salt. Using a large stock pot, place the chicken along with the salt, pepper, onion, and celery stalks. Boil chicken until well done and reserve stock. Remove chicken from pot, cool, and remove skin and bones. Dice the chicken and in a large bowl, combine with the chopped celery, eggs, a spoon full of stock, and remaining ingredients and mix well. Slice the bread, onions, and tomatoes. Layer the onions, tomatoes, spinach, and chicken salad between two slices of bread and serve.

I was looking for something to repair the chicken salad I had made, which I had gleaned from several recipes off of Paula's site. Jamie's was the key with the hard boiled eggs. I LOVE this recipe! Made a few alterations since I have not purchased Paula Deen's seasonings (I need to but I am still in college on a budget & the only grocery around me is Kroger & Costco)! I added 1 Teaspoon Cavender's Greek seasoning, 2 Teaspoons lemon juice, 2 Tablespoons fresh dill, 1 Tablespoon Dijon mustard, and of course added the rest of the ingredients! My boyfriend and I were amazed that a few can of Kirklands chicken from Costco could taste so amazing thanks to Paula Deen! I love you & I love chicken!

the only thing i would suggest is mixing your seasonings with the mayo. just in case there is to much seasonings or not enough. I found if I cut down on Janes Crazy salt it's not so salty. But I LOVE,LOVE,LOVE this chicken salad !!!!
