Crustless Spinach Quiche Crustless Spinach Quiche Recipe Courtesy of

Ingredients Add to grocery list

Cooking spray
1 (10 ounce) package frozen chopped spinach
4 eggs
1 cup sour cream
1 cup small curd cottage cheese
1/2 cup grated Parmesan
1/4 cup unbleached all-purpose flour
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups grated Cheddar





Preheat the oven to 325 degrees F. Spray an 8 by 8-inch baking dish with cooking spray.

Unwrap the spinach and put it, box and all, on a plate. Microwave and cook on high power for 4 minutes. Allow it to cool and remove it from the box. Squeeze out all of the liquid out of the spinach and put it into a medium bowl.

Combine the eggs, sour cream, cottage cheese, Parmesan, flour, salt, and pepper, in a medium bowl. Stir together, or blend in food processor until the mixture is smooth, about 1 minute. Pour the mixture into the bowl with the spinach. Add the Cheddar and blend with a spoon until well mixed. Pour the spinach mixture into the baking dish and smooth out the top.

Bake until set, about 45 minutes. Remove the baking dish from the oven. It will be puffed up, but will fall slightly as it cools. Allow it to cool, then, refrigerate. Cut it into squares and serve.

I made this recipe and it turned out great - love it and will make it again. I substituted 2 cups of rough grated zucchini and 1/4 cup minced sweet onion for the spinach. I now have a great garden zucchini recipe. Woohoo!!

I made this quiche for supper tonight. I sauteed some Baby Bella mushrooms and tossed them in. I doubled the recipe and baked it in a 13x9 baking dish. Oh my gosh!! What a wonderful recipe! We have leftovers to fight over for lunch tomorrow... smile Thank you!

Made the "Crust-less Spinach Quiche" and it was fantastic. Then made one I called "Crust-less Quiche Puttanesca". Used basic recipe then added quartered cherry tomatoes; a wee bit of hot sauce; fresh dill; capers; a small amount of salt; and, fresh ground pepper (I used Multi-Colored Peppercorns). Great cold, room temperature, or warm (20 seconds in the micro). Took both to a party last Saturday and they were both a big hit! EASY recipe that people believed too me a long time to make. NOT!! I am making this dish tonight for my quilt group. I don't like making the crust so this is awesome. I also want to tell you that I think the fallout over something said decades ago is a bunch of hooey. Everyone I know has changed their views over their lifetime. I am so sick of all of this agitation to keep racism alive. So many have moved past it over the years and grown up. Some never will but as long as there are people fomenting trouble, there will continue to be a divide. Let's remember that there really are starving children in China. In my world, people are accepted and loved. You are so upbeat, I love your smile and energy!
