1/2 cup (1 stick) butter
2 cups sliced baby bella mushrooms
1/4 cup chopped onion
3 cloves garlic, minced
2 cups heavy whipping cream
1/2 cup white wine
1/4 cup fresh lemon juice
1 teaspoon Italian seasoning
1/2 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon pepper
2 1/2 pounds fresh medium shrimp, peeled and deveined, tails intact
1 cup fresh spinach
1 (16-ounce) package penne pasta, cooked
1/2 cup shredded Italian blend cheese
In a large skillet, melt the butter over medium heat. Add the mushrooms, onions, and garlic. Cook until the mushrooms are tender, stirring frequently, about 5 minutes. Stir in the cream, wine, lemon juice, Italian seasoning, cayenne pepper, salt and pepper and simmer until slightly thickened, about 8 minutes. Mix in the shrimp, stirring frequently, until the shrimp are pink and firm, about 3 minutes. Add the spinach and cook for 1 minute.
In a large serving bowl, combine the shrimp mixture and hot cooked pasta, tossing gently to coat. Sprinkle with the cheese.

Paula & Bobby, I watch your show every day but one day last week (can't remember which day but it must have been Tuesday because that's the only day you have a shrimp recipe listed) I watched you cook a shrimp & baby bella mushroom recipe that Bobby said was his son's favorite meal. I was called out of the room during part of it so I didn't catch the entire recipe. I sure missed the part about there being a pint of heavy whipping cream in it. I was hoping to make the recipe for my family but my husband is diabetic (struggling to maintain) and I just can't serve him this. Is this the recipe you made on the show? If it is, can I use no fat half & half in place of the cream without ruining the flavor? If it's not the correct recipe, can you please send me the right one or post it here on your web site. I'm sure others would be interested as well. Thanks so much! I LOVE watching the show & really enjoy having Bobby's lighter versions of your great recipes.

I LOVED this...so did the family. Yes, even my mother-in-law raved! It doesn't get any better than that. I did take the tails off the shrimp (such a pain to try to eat shrimp in a sauce with the tails on) AND I couldn't find fresh spinach on the day I wanted to make it (we live in a small town) so I had to use frozen. I'm sure it is better with fresh spinach, but we loved it all the same.

Saw this one day on "Paula's Best Dishes" and I just had to try it. It is SOOOOOOOOOOOOO yummy and super easy to make
We had it with some bruschetta and it was the perfect meal. Next time, though, I WILL use less butter (perhaps only 1/4 cup)...Definitely not a meal to have if you're on a strict diet :S So, thank goodness I'm NOT! Wonderful recipe, Paula. I'll definitely try some of your other recipes!

Love the recipes! Purchased the stainless steel copper bottom cookware. Absolutely love it! I'm 57 yrs old and have run a actually 50's drive-in for the past 32 years with my husband and for the last 10 yrs also with our oldest son and daughter-in-law. We now work 3 days a week but I love to cook on my days off. Really enjoy your show. We used to get back-to-back episodes of Home Cooking and Best Dishes. Now just Best Dishes. But that's ok! Too bad we didn't have satelitte until January of this year. I have yet to make a recipe that my husband has not enjoyed. Have shared many recipes with friends and family.
