Servings: 12
Prep Time: 20 min
Cook Time: 10 min
Difficulty: Easy

Ingredients Add to grocery list

1 1/2 cups unsalted crushed pretzels (about 15 pretzel rods)
4 tablespoons melted butter
2 tablespoons applesauce
1/4 cup plus 2 tablespoons sugar
1 (8-ounce) package reduced-fat cream cheese
3/4 cup sugar
1 cup reduced-fat nondairy whipped topping
2 cups boiling water
2 (0.30-ounce) packages sugar-free strawberry gelatin
2 cups cold water
1 cup fresh sliced strawberries
1 (8-ounce) can crushed pineapple, drained

Preheat oven to 400 degrees. Spray a 9 x 13-inch baking pan with nonstick spray.

Combine the pretzels, melted butter, applesauce, and 2 tablespoons sugar in a medium bowl until blended. Press the mixture into the pan. Bake until just set, 5 – 7 minutes. Transfer to wire rack to cool completely, about 20 minutes.

Meanwhile, beat the cream cheese and the remaining 1/4 cup of sugar in a large bowl with a hand mixer on medium speed until smooth. Fold in the whipped topping. Spread the filling over the cooled crust. Refrigerate until well chilled, 30 – 40 minutes.

Pour the boiling water over the gelatin in a medium bowl, stirring until the gelatin dissolves completely, 1 – 2 minutes. Stir in the cold water until blended.  Add the strawberries and crushed pineapple, stirring to combine well. Pour the gelatin mixture over the cream cheese mixture. Refrigerate until set, 3 – 4 hours.

Bobby’s Tip:
An easy way to crush the pretzels is to place them in a food storage bag and crush them lightly with a rolling pin (or baseball bat) until the pretzels are finely crushed.

Will try this for groups at church. But alot of carbs is right,128?????

By judi on December 11, 2013

I have done calculation for Carbs and calories. I ommited the 3/4 cup sugar because I believe that to be a typo and I also did not use the applesauce. I also used a 14oz bag of frozen sliced strawberries with not syrup or sugar and doubled the pretzels to make a thicker crust and 6 tbs of butter. I used 16 servings and total carb count is approximately 33g and calories are 226 per serving. Hope this helps.

I also like to make this using frozen raspberries and raspberry jello. It is really good.

I am following the Weight Watcher Points + program. This recipe seems like it has a tremendous amount of carbs per serving (128). Is this correct? Thank you for including all of the nutrional info in these recipes.

By Sheri on March 19, 2012

Please tell me the 128g of carb for a serving of Bobby’s Lighter Strawberry Pretzel Salad is a misprint. Not diabetic freindly.

I am sure this is good but looking at the nutritional information I am shocked at how many grams there are in sugar and carbohydrates. 22 grams of sugar and 128 grams carbohydrates, is that correct? I won't be making this at all. My husband and I have vowed to eat less sugar and less carbs. Is there a way to make this recipe using splenda? There is also a lot of butter in this recipe.

Regarding printing (comments from 2010): There's a "Print" icon/button above the picture for every recipe. I'm not sure if it's a recent addition as I'm new to the site.

I don't know yet how this tastes as I'm just now making it, but it appears in the ingredients you need another 3/4 c. sugar... when does that go in? I'm assuming it is an error; at least hope it is. Will let you know how it turns out.

I am sure it is as great as the original, but does it really have 128 grams of carbohydrates in one serving or is it a typo?

Did not think I would like this recipe as well as mine! Pineapple?! It was very good though and I especially like the fact that it is so light and has a lot less calories!!

Does anybody think we could use Splenda instead of sugar when it calls for it?  Or is that a bad idea?

By Leslie on May 21, 2010

I absolutely adore your moma`s cookin but over the years have tried to make them lighter also.Have you tried using Splenda in any of them,it cuts more calories and is also delicious. My husband is in the Army,I have made your family`s recipes for our friends all over the world.I hope we get to meet you all one day.

This strawberry pretzel salad is one of my all time favorites but since I have become diabetic I have given it up. NOW I can have it again with this lighter and sugar free version. Thank you so much for re-working this one.
