1 lb. ground beef
1 lb. ground pork
4 tablespoons fresh parmesan cheese, grated
1 to 1 1/2 cups Italian dry bread crumbs
3 large eggs
1 teaspoon salt
1/2 teaspoon freshly ground pepper
2 cloves garlic, finely minced
1 tablespoon fresh basil, finely chopped
1/4 cup fresh parsley, chopped
1/2 teaspoon dried oregano
4 oz. fresh mozzarella, divided into 12 pieces
3 tablespoons olive oil
2 jars of your favorite red sauce
2 pounds spaghetti, cooked al dente
In a large mixing bowl combine ground beef, ground pork, parmesan, eggs, salt, pepper, garlic, basil, parsley and dried oregano. Add bread crumbs 1/2 cup at a time until mixture is not to wet and can be formed into balls easily. Form mixture into 12 balls using your thumb to press a hole in the center. Insert a piece of the fresh mozzarella into the hole and close the hole by pushing the meatball mixture around it to secure the mozzarella inside each ball.
Heat a large saute pan over medium heat and drizzle olive oil into it. Add meatballs and cook until just browned. Using a slotted spoon, transfer meatballs into a slow cooker. Pour red sauce over the meatballs and cook on LOW for approximately 5 hours. Serve the stuffed meatballs and sauce over spaghetti.

This was a great meatball recipe! Everybody who tried them loved them. I did use a homemade sauce, I figured I'd go all out and it turned out great (but if you're short on time, jar is quick and tasty as well.) The mozzarella inside did not impress me that much, I dont think it made a huge difference. Next time I will make the meatballs a little bit smaller and just sprinkle them with fresh grated mozzarella afterwards. I browned them on the stove top and didn't have a problem, however they are huge so I can see how oven may be easier. One of my family members (a novice cook) suggested more salt and pepper, which I will most likely do the next time I make these..and there will be a next time!

The best meatballs evah!! I freeze the fresh mozzi first to slow down the melting factor and then stuff the meatballs and make my own sauce. I recently made this for friends, and they love it as much as we do. Sent the recipe to her. Thanks, Paula!

I use our slow cooker allot with pork chops and OJ and salt and pepper and onions, I throw in a few potatoes quartered and carrots. It's so nice to come home to with a ready made home cooked meal. I usually put the cooker on the front porch (cement) and that helps keep the house free from odor and what little heat it has. With Roast beef I put a little water on the bottom of slow cooker and add same stuff as above but I'll use dry onion soup package. I wish you would provide nutritional values with all your recipes for those of us who have dietary issues such as low sodium, low fat, etc. The recipe sounds/looks absolutely delicious, however, carbs and fat grams are probably higher than many of us can eat. So sorry I can't share in the delight of this recipe.
