1 teaspoon dried parsley
2 cup sour cream
salt and pepper
8 ounce cheese, cheddar
1 lb sauteed shrimp, peeled
8 tablespoon butter
vegetable oil, for coating
6 large Idaho potatoes
paprika
Preheat oven to 350 degrees.
Begin by washing potatoes, drying them, and gently pricking them with a fork on the sides. Coat each potato with vegetable oil, place on foil covered pan, and bake for approximately 1 hour.
Place the butter in a large bowl. Remove the potatoes from the oven and slice the top third off of each potato. Gently scoop out the potato and place in the bowl. Using a mixer on high, mix the potatoes, butter, sour cream, salt, and pepper. Fold in the shrimp and cheese into the mixture. Gently stuff the mixture back into the potato shells, making sure not to break them. Pile the mixture as high as you can on top of the potato shells. Sprinkle each potato with cheese and paprika for color. Bake in the oven for approximately 20 to 30 minutes until browned on top.

Hello everyone and Hello Paula I want to make this recipe but my kids dont like seafood. Lol were from TX so we are all about the beef:) But I was wondering if I made slices if steak would that work to as well as seafood just have both.

Made this for dinner tonight and my family absolutely loved it. I thought about using it as a side dish and making a meat and vegetable with it but glad I didn't because it was a meal all in itself. Will be making this again!

Im a HUGE Paula fan, and when I watched her make this recipe on her show, I just had to make it, so I bought all the stuff and made it for dinner for my boyfriend and I. The scooping of the potatoes was challenging, I ended up baking the potatoes for an hour and 20 minutes because an hour of baking didnt cook to potatoes well enough. Once everything came together and the recipe was followed, it turned out absoulutely AMAZING!!! One of the best dishes i've ever had! and can I say that the leftovers are even better. We had 4 leftover stuffed potatoes and had 2 the next day at work and they tasted even better. I give this recipe 10 out of 10 stars. Thank you Paula!

I have not tried any of Paula Deen's recipes. I just made a list of some of my favorite dishes & this weekend my daughter & I are gonna throwdown!Everything Paula cooks, drives my stomach insane! Paula can make a fried bar of soap look delicious. I enjoy watching Paula Deen prepare, cook, entertain with family,friends & guests. Paula makes cooking fun because she is so down home real. Other shows are so technical. I cant wait to spread all my dishes on the table, take pictures & EAT!! I will be celebrating, I will have surgery after my last 3 chemo treatments for breast cancer.
