Cheesy Shrimp Dip

Ingredients Add to grocery list

1/4 cup butter
2/3 cup chopped red bell pepper
1 pound medium fresh shrimp, peeled, deveined, and coarsely chopped
1/3 cup sliced green onions
1 cup sour cream
1 cup shredded Parmesan
1 cup shredded mozzarella
1/2 cup mayonnaise
Pinch salt
Pinch cracked black pepper
Assorted crackers, for serving

Directions

Preheat the oven to 350 degrees F.

In a medium skillet, melt the butter over medium heat. Add the red bell pepper and cook for 3 minutes. Stir in the shrimp and green onions and cook until the shrimp are pink and firm, 2 to 3 minutes. Stir in the sour cream, cheeses, and mayonnaise. Add the salt and pepper, to taste. Spoon the mixture into a 2-quart baking dish. Bake until lightly browned and bubbly, 30 to 35 minutes. Serve with assorted crackers.

The Dip tasted good, BUT it was very watery.

Delish!!!! I used Old Home sour cream because it's not watery. I also blotted the red peppers and green onion to lessen the water content. I also blotted out all the water in the shrimp....it was perfect!!! We loved it!!!!! And it was not watery at all. Devine!! smile

Oh my gosh, I am THE biggest Paula Deen fan, ever since she had her first show on Food Network! Every Saturday morning was centered around her show, and I would write down just about every recipe she shared. I have made alot of her recipes. Whenever I hear someone mention Savannah, GA, I automatically ask if they have ever been to the Lady & Son's restaurant. It is so amazing to me, just how many people have been there from around here! I have been ill for a number of years, and she has a way of making you feel alive, almost like she is a friend of yours! Love you girl!

This past Friday 4/8/11 we had dinner at Uncle Bubba's. We had the shrimp and crab dip with the multi-colored chips.(The menu said that they stole it from the Lady and Sons restaurant) smile I was wondering if I could get the receipe for that dish...it was absolutely wonderful.
