Ingredients

  • 4 chicken breasts, boneless, skinless, cooked and diced
  • 1 1/2 cups bean sprouts
  • 1 1/2 cups snow peas, chopped
  • 1/4 cup green onions, chopped
  • 1 teaspoon sesame oil
  • 5 teaspoons soy sauce
  • 1 lime, (about 3 tablespoons fresh lime juice)
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sugar
  • 1/2 cup celery, chopped
  • 1 (8 oz) can sliced water chestnuts, drained and minced
  • butter lettuce, for serving

Preparation

Step 1

Combine chicken, celery, snow peas, green onions, water chestnuts, bean sprouts and scallions.

Step 2

In a small bowl whisk together sesame oil, soy sauce, lime juice, grated ginger, sugar, salt and pepper. Toss with chicken mixture and mix well. Serve chilled.
