Peach and Cinnamon Cobbler

We love COBBLER and we’re not talkin’ about the guy who fixes your shoes. This is a man’s “pie” without all the fuss. Throw all the fruit in a casserole dish, top it with a simple topping and watch it bake! We like to wait to take it out of the oven just when the first juices are oozing over the side of the dish.

Peach and Cinnamon Cobbler
Butter for coating dish

6 cups peaches, halved, pitted, and sliced 1/4 inch thick
3/4 cup sugar
1/4 cup quick-cooking tapioca
1 teaspoon ground cinnamon
1 teaspoon freshly squeezed lemon juice
Pinch salt

1 2/3 cups all-purpose ß our, plus additional
for dusting
3 1/2 tablespoons sugar
1 1/2 tablespoons baking powder
1/8 teaspoon salt
6 tablespoons cold unsalted butter, cut into cubes
2/3 cup heavy cream, plus additional for brushing

Preheat oven to 350°F. Butter a 2 1/2-quart baking dish. In a medium bowl, stir together the filling ingredients. Pour filling into the prepared dish; set aside.

For the topping, in a food processor or large bowl, pulse or whisk together the 1 2/3 cups flour, the sugar, baking powder, and salt. Pulse or cut in the butter until the
mixture resembles coarse crumbs. Slowly add the 2/3 cup cream, mixing until the dough just comes together. Turn the dough onto a lightly floured surface and pat together. Form the dough into 2-inch balls. Flatten balls gently with the palm of your hand.

Evenly arrange the dough rounds on top of the filling. Brush a little cream over the rounds. Bake about 1 hour or until the biscuits are golden and the filling is bubbling.

Can you make this recipe using canned peaches? My granddaughter had your peach cobbler at your restaurant a couple of weeks ago and loved it. I would like to make it for her.

Hi Paula, I want to tell you how much I enjoy watching you cook and you come up with the best ideas. I am 35yrs. old and I am not a very good cook. I always run out of ideas. My mom never taught me how to cook growing up, and she passed away when I was 24. All the good homemade recipes she knew how to make from scratch (that I hated back then). Now I wish I knew to cook them. She used to make the best homemade peach cobbler. I can't make it the way she did. I am going to try your recipe, you make everything sound so easy and look so good. But honey, I can mess up even the most simple recipe. I've been wanting to try the fried chicken recipe I saw on your show this week. You poured a glaze and pecans on top, and you had turnips and dumplings! Now, that's my kind of food. Your sons don't know how lucky they are to have a great mom like you! smile Wendy.

Dear Paula, I tried your fresh peach ice cream and it was delicious. We have freas peaches this season and I have been interested in your feresh peach receipes, the peach cobble/pie in your cook book is very good. We love most any dish that calls for fresh or frozen peaches. We put enough peaches during the peach season to last us all winter.So when evev we want something that calls for peaches all we have to do is reach into freezer. Right now we are waiting on another box of fresh peaches, this will be our third box. Alot of them get eaten just laying on the coun ter tops before we can get them ready for the freezer.

I like the really easy recipe in your Lady and Sons cook book that has one to just mix up the topping of sugar, milk, and flour and pour it over the fruit in the casserole dish.  I don’t add cinnamon because I like to get the full taste of the peaches.  It is delcious and e-a-s-y!
