  • 1 (3-4 lb) roasting chicken
  • 2/3 cup chicken broth
  • 3 oranges, 2 quartered and divided plus 3 orange slices
  • 1 medium onion, quartered
  • 4 tablespoons butter, softened
  • 1 bunch rosemary sprigs, (reserve several sprigs for cavity and garnish; finely chop 2 tablespoons)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/4 cup orange marmalade
  • 1 head garlic
  • paprika, pinch

Step 1

In the bottom of slow cooker, add chicken broth, 4 orange quarters and onion.

Step 2

In a small mixing bowl, stir together butter, chopped rosemary, salt, pepper and marmalade.

Step 3

Salt and pepper the chicken and the cavity. Place rosemary sprigs, garlic and remaining orange quarters inside the cavity.

Step 4

Using your fingers, loosen the skin from the meat. Place half of butter mixture underneath the skin. Rub remaining butter mixture on the outside of the chicken.

Step 5

Place chicken on top of orange quarters and sprinkle with paprika. Cover and cook on low for 8 to 10 hours, or until juices run clear. Garnish with orange slices.

I made this most

I made this most wonderful chicken today in my crock pot....It was so moist and the flavor was so good! My son and my sister just loved it!......The first time I made this Orange Chicken on my Grill.....I did it as a beer can chicken....I added OJ to the beer...and it basted it with the rest of the ingredients and drippings in the pan....Glazed it at the end of cooking for a great crispy skin....So this time I used my crock pot...And I basted it throughout the day....No crispy skin, but non the least a very flavorful skin and meat....But in the crock pot, that is to be expected....I have not idea how this would ever come out dry and flavorless as one critique was stated....This is a keeper in our home......

I made this Grea

I made this Great Recipe....But.....I made it on my Grill.....I made a Beer Can Orange Chicken.....Still.... Low and slow.....I poured 1/2 of the beer in my roasting pan, with the Broth, Onions, Garlic, Chopped Rosemary, and Oranges...I used this to baste my Bird.......I then added OJ, Garlic, Onions, and Chopped Rosemary into my Beer Can.......I prepared the Chicken according to this recipe...Minus stuffing, As The Beer Can Was , The Stuffing.....I really wanted that super moist, flavorful meat, with a Crispy Skin.....It was.....Wonderful!.........I am a Crock Pot Girl and I will also do this dish in my Crockpot Too! A keeper in my Kitchen!....

I have done many

I have done many of Paula's recipes and love them but this one did not impress. I cooked it on low and slow and for less time then called for and the meat ended up dry and tasteless and the outside of the chicken was very dry
