Ingredients Add to grocery list

2 tablespoons butter
1 1/2 cups long-grain rice
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 clove garlic, minced
2 cups water
1 (14 1/2-ounce) can diced tomatoes with green chiles
1 teaspoons chili powder
1 teaspoon salt
1 cup shredded Cheddar

In a large saucepan, melt the butter over medium heat. Add the rice, onion, peppers, and garlic. Cook until the rice is browned and vegetables are tender. Stir in the cheese and transfer to a serving bowl.

Great recipe! I added 1/2 c. carrots and 1/2 c. frozen corn, seasoned with salt and pepper, increased garlic to 2 cloves instead of 1 and added about an extra 1/2 c. of water. This recipe turned out perfect!!!
