1 cup (2 sticks) butter or margarine, softened
1 cup crunchy peanut butter
3 cup confectioners’ sugar, sifted
1 1/2 cup graham cracker crumbs
1 1/2 cup semisweet chocolate chips
Line a 13 by 9 by 2-inch pan with foil.
Combine the butter, peanut butter, sugar, and graham cracker crumbs in a food processor. Process until the mixture forms a ball. Press into the foil-lined pan using your hands or a spatula.
Melt the chocolate chips in a double boiler over simmering water or in a microwave-safe glass dish in the microwave for 1 minute on high (100%). Stir. If the chocolate has not completely melted, microwave for 10 seconds more, then stir. Spread evenly over the cookie layer with a spatula. Chill for several hours.
When ready to serve, allow the candy to come to room temperature before cutting into pieces. Store in an airtight container in the refrigerator.

It is not what I expected but I like it! It reminds me of Peanut Butter Cups in a bar form. Yummy! Definately more of a candy consistency than a cookie. My kids love it...

This recipe is Uh-Mazing!!!!! It is very rich so cut your pieces small. I think next time I will use dark chocolate and top with toasted almonds. Do make this recipe you will LOVE IT!!!!!!! thank you Paula!!!

Hey Paula I make cookies every year for Gifts. This year i am having surgery on my foot. I have seen many recipies that are made with vanilla wafers. And i thought it would be easy for me to do my cookies sitting and not using the oven. I know i can make rum balls, but i saw a recipe somewhere that was made of nilla waffers and cream cheese and other ingriedients. Then they were dipped in chocolate. Any way you can help here. I made this at Christmas. I found that I really needed over 2 cups of chocolate chips in order to cover the whole top of the mixture. That's OK -- I LOVE CHOCOLATE! Also, I made the mistake of grabbing the wrong kind of butter -- I used the low-fat & it just didn't work out right. I will use the real thing next time! It was messy when I cut it, but it was DELICIOUS! I'm going to make it again!
