Farmer’s Pork Chops

Potatoes, onions, and pork chops in a delicious white sauce.

Servings: 8 servings
Cook Time: 1 hour
Difficulty: Easy

Ingredients Add to grocery list

8 Boneless Pork Chops, about 1/2 inch thick
8 medium potatoes
1/2 medium onion
Salt and pepper to taste
1 cup all-purpose flour
2 tablespoons Paula Deen’s Seasoned Salt
1/3 cup vegetable oil
Paula Deen’s white sauce (see below)

Paula Deen’s White Sauce

8 tablespoons (1 stick) of butter
1/2 cup all-purpose flour
4 cups milk
1/4 cup chopped fresh parsley or chives (optional)
1 to 2 teaspoons salt
1/2 to 3/4 teaspoon pepper





Preheat oven to 350 degree F. Peel potatoes; slice 1/4 inch thick and cover with cold water. Slice onion into very thin slices, and then cut the slices in half. Drain potatoes; layer half the potatoes in a well-greased 15x10 inch casserole dish. Scatter half of the onion slices on top of potatoes. Sprinkle with salt and pepper to taste. Repeat with remaining potatoes and onions. Cover potatoes with white sauce. Cover casserole dish with plastic wrap and microwave for 5 minutes on high or bake uncovered for 15 minutes.

Sprinkled seasoned salt on pork chops and dredge chops in flour mixture. Lightly brown chops in vegetable oil. Do not cook them completely. As chops are removed from frying pan, lay them on top of potatoes.

Bake at 350 degrees F for 50 to 60 minutes. The juices from the pork chops will drip down into the potatoes. Delicious!

Paula Deen’s White Sauce

Melt butter; remove from heat. Stir in flour; add salt and pepper. Return to heat and cook, stirring constantly, until mixture is bubbly. Add milk, 1 cup at a time. Bring to a boil over medium heat, stirring frequently. Reduce heat and simmer 1 to 2 minutes, then let stand at least 1 to 2 minutes. Stir in parsley or chives, if desired.

I absolutely never write reviews for anything - ever! But, I made this for dinner last night, and it was delicious!!! I highly recommend, and I am adding this to our family's go-to meals! Sooo YUMMY!!! The only thing I would caution you about is the amount of pepper that I used was just a tad too much. I put a little bit on the first layer of potato and onion, and then again on the second layer just like it says to do. Then I added 3/4 of a tsp. into the white sauce like it suggests. I would probably cut that back to only putting it on the first layer of potato and onion and doing the salt on both layers, and then only doing the 1/2 tsp. into the white sauce rather than the 3/4 tsp. It was just a little too much heat for my family, but the salt was the perfect amount. That is the only thing I would do differently. Everything was perfect, and we will definitely be enjoying this dish again in the future! (Oh! And I used whole milk in the sauce which added a wonderful richness to the flavor!)

About 5 years ago my husband bought "The Lady & Sons Savannah Country Cookbook" for me as a Valentine's gift. This recipe was one of the first I tried from the book. It's now my go to recipe for when I want to impress company with some good Southern cooking. In fact, my relatives from Idaho couldn't get enough & my pastor's wife from MS just raved about it when I served it to her & our Pastor. The pork chops are very tender and the potatoes are fantastic. The potatoes are even better leftover. I do cook my potatoes about 10 minutes before I top it with the pork chops as some of the potatoes weren't quiet cooked through the first time I made it, but I may not be slicing my potatoes quiet thin enough either.

This is one of the best pork chop and potato recipes I have ever made! The sauce is amazing and has a wonderful flavor. My husband and children loved it. My husband couldn't stop eating it, even after he said he was full! My 20 mth old was able to eat this pork chop dish when she has never been able to eat pork otherwise.
