Recipe Courtesy of Paula DeenServings: about 5 dozen miniature muffins
Cook Time: 20 min
Difficulty: Easy
1 cup water
2 cups sugar
2 cups grated apples
2 cups raisins
1 cup (2 sticks) butter
2 teaspoons ground cinnamon
2 teaspoons freshly grated nutmeg
1/2 teaspoon ground cloves
1 cup chopped walnuts
2 teaspoons baking soda
31/2 cups all-purpose flour
Preheat the oven to 350 degrees F.
Combine the water, sugar, apples, raisins, butter, cinnamon, nutmeg, and cloves in a saucepan; bring to a boil. Remove the pan from the heat and cool completely.
In a large bowl, stir the nuts and baking soda into the flour. Add the cooled mixture to the bowl, and stir until blended. Fill greased miniature muffin tins with batter to the top. Bake for 15 minutes.
Note: Extra muffins can be stored in a re-sealable freezer bag

Dear Paula,You may get 2 of these e-mails as I am not great with gettin on the computor. Ha! As i was saying before I pushed the wrong key, my hubby and I watch your program all the time. I get your books and have areceipe book only with your receipes,that i have composed.We are retired and live on a hobby farm here. We love the fact we can make a receipe from you and do not have ot go over our budget for the month for the things to put in your dishes. It was 39�low here in Mn. this morning and the smell of your apple muffins was out of this world. Hot coffee and the butter dish on hand. I made these muffins using granny smith apples, and made the Texas size muffins, they got great reviews from the girls at the work place, so that means this is a keeper. I grated some of the apples and chopped the other cup, I like little chunks of apple in this receipe, this will be made again.

Yummy! I used golden raisins instead of regular and they "melted" right in; my kids don't care for raisins in muffins and they couldn't even tell they were there! I also did not grate the apples; just cut them into smaller pieces. I will definitely use this recipe again.

This recipe is fabulous Paula! My brother and I have both made these and took them to our church potluck! They were a hit to say the least! Wanted to let you know that we enjoy these muffins... Usually as a quick snack for me or the kiddos. I did cut the nutmeg in half as we found it to be a bit spicy using the full amount. Other than that, they are great and I will keep making them! Thanks for a great and healthy snack!

I used sweetend dried cranberries instead of raisins since I made these around the holiday's. They were a huge hit with my family and I'll be making them for years to come!
