Piña Colada Cheesecake

Ingredients

  • 1 (8 oz) package softened cream cheese
  • 1 cup sour cream
  • 1/3 cup granulated sugar
  • 1 teaspoon rum extract
  • 1 teaspoon vanilla extract
  • 1 (6 oz) graham cracker crust
  • 1 cup pineapple preserves
  • 1/2 cup toasted coconut

Directions

In a large bowl, combine cream cheese, sour cream, sugar and extracts. Pour into crust. Chill until set, about 4 hours. When ready to serve, spread preserves over cream cheese filling. Top with toasted coconut.
