Lemon Tarts Recipe by Paula Deen

  • 4 eggs, beaten
  • 2/3 cup fresh lemon juice
  • 2 tablespoons sour cream
  • 1/2 cup confectioner's sugar
  • 6 frozen mini tart shells
  • whipped cream, optional topping


Mix eggs, lemon juice, sour cream and confectioner's sugar in a large mixing bowl. Add mixture to empty frozen tart shells. Bake in oven for 15-18 minutes at 325°. Top with whipped cream. (optional)
