This recipe really looks good. I like the idea of cooking them in a muffin pan. Also I think I'd add a little bit of cheese to the recipe.

I make mini meatloaves alot but I always use oats instead of bread crumbs. I always topped mine with catchup, may try your topping recipe next time if I don't forget. LOL

Oh man those look great, if it wasn't so late I'd run in the kitchen and make them!! I use to cook 2 big meat loafs for my big family! At the time I still had 5 at home I did have 7 children, and I come from a family of 9 I was the second child born and I'll tell you mom and dad taught me how to cook, been doing ever since. Gets hard some times because of bad back, other ailments. I just keep trying to find the easiest electrics out there to make it easier and I love to had anything and everything to my casseroles. I love to season, I just put what comes into my mind yupp!! I love watching your programs Paula I made the most gorgeous Turkey OMG! it came out so moist, I followed your directions, got to send you a photo of it sweetie!!how can I do that just made it 2 wks ago and now were having turkey salad oh my its so good!! The muffin tins are an excellent idea because my husband & I never finish a whole meatloaf and I can then freeze a few for another meal. Also, this would be great for kids because they could help make their own. I have some of Paula's cookbooks and plan on buying more. Love you guys!!

Love, love, love this video. As a woman that works outside the home, I have very little time to prepare dinner for my husband in the evening before it is time to start preparations for my next long day at work. This looks like a very quick and easy recipe to prepare that could even be pre-made (either baked or unbaked) ahead of time. I will definitely be trying this really soon. I work for the Doris C. Weaver's Girl's Club of Phenix City, Alabama. I cook with K-2, 3-4th, and 5th and up. We are going to make the mini-meat loaf. We talk about y'all often at the Girl's club table. We all love you. The meat loaf I will make will be basic. For one class of 20 11/2lbs. of hamburger, 2 eggs, bout a 1/2 cup of ketchup or tomato sauce,4 slices of bread(soaked in 1 cup of milk). One small onion,(if girls desire onion). Mix all together and use our muffin pans. Bake at 350 for 20 to 30 minutes. I love the idea. Hope you got my corndog casserole recipe. We created at the Girl's Club. Love your internet show. I love meatloaf, 1.5# hamburger, 1/2 c oatmeal(finely grated in processor), 1/2 onion diced, 1 can tomato sauce; mix all together and bake in 350 oven til done. Glaze 1 can tomato soup, 1 tsp vinegar, 1 tsp mustard, 1 cup brown sugar; put on top of meatloaf and warm in oven till warm... And I love to cook in the kitchen with the grandchildren, so much fun...
