Dear Jamie, Can you please tell me how you store the extra? I have heard that it can be dangerous to store garlic in olive oil (any oil) unless you know the correct procedure. Love the new shows especially the lighter versions. I too am Diabetic and have learned new ways to cook Family Recipes that are healthier. Now that we have some Soy allergies with Grandson and wheat with my Son, I have had to learn completely re-learn how to cook. So it is nice to see you boys teaching Mom, like my children are as well, we also have a Vegetarian daughter so my meals are all new. Thank You, Bea Didio

Thanks so much. I usually roast my garlic in the oven. This is a great idea and i just know it will be wonderful. So much better than the store bought, i'm sure!! Fantastic!!
