Sounds good to me and will try this soon. Have long wanted to have a recipe for pork loin chops w/out drying same when fried or oven roasted.

That's a video rating. Chops, I cut mine from a pork loin roast, are a slam-dunk. I would revisit the oven temperature. Those beautiful pork loin chops can be made into shoe leather without too much trouble. I think I shall "brown" mine on the stove top, both sides, and finish off in the oven for 2 - 6 minutes depending on thickness, oven temp control, and whether the chops started at room temp or cold from the refrigerator. The problem with the video is that the superimposed written directions should be starkly contrasting, and, thereby, readable. A nice white would do. Cindy, my wife, does a similar thing with a chuck or rump roast in a pot, moist heat at low (275) temp, all day, and it's again a slam-dunk.
