Paula dear, Hang in there. Many of us grew up just like you did. That was common language back then. If you watch Bait Car, you'll hear the blacks call each other that VERY FREQUENTLY. None of us would do it today, but they do.

It is funny to me how food network who i use to adore and watch day in and day out could do such a cruel thing to paula and further more you ought to be ashamed of what you have done to her, she made you alot of money and you had no problem with her then,i would also be willing to bet there are a whole lot of skeletons in them closest at food network and a few other places. i am having food network removed from our cable listing and so are many other women down here in the south and i promise you paula we are behind you in alabama and we love you and will continue to support you no matter where you go....... roll tide roll.... kelley

Well, as for me Paula and the boys can do nothing wrong!
I love the way she explains everything. You understand because she makes it simple. She knows how to talk to you, like she is talking to family.

I use a turkey baster to "suck" the solids from the bottom after spooning the foam off. It's easier if you tilt the measuring cup.

Thank you for the tip Jamie, I am a huge fan of lobster but always just melted the butter for dipping. I will clarify it next time and see how that tastes!

Thank you so much for this technique!! After cooking for a zillion years (and owning a zillion cookbooks), clarifying butter has been the one thing that has managed to elude me. It's so simple. Who'd'a thunk all it would take is a glass measuring cup??
A sip of butter is a good thing! My nana taught me to eat it on crackers and when the crackers were done, to swipe it from the knife until the butter was gone. To paraphrase Julia Child, the three secrets to good cooking are butter, butter and butter!
