Well, as for me Paula and the boys can do nothing wrong! I love the way she explains everything. You understand because she makes it simple. I use a turkey baster to "suck" the solids from the bottom after spooning the foam off. It's easier if you tilt the measuring cup.

Thank you for the tip Jamie, I am a huge fan of lobster but always just melted the butter for dipping. I will clarify it next time and see how that tastes! Yet again though it is hard to focus on what you're doing as you are so handsome *sigh* grin

Dear Jamie, Thank you so much for this technique!! After cooking for a zillion years (and owning a zillion cookbooks), clarifying butter has been the one thing that has managed to elude me. It's so simple. Who'd'a thunk all it would take is a glass measuring cup?? A sip of butter is a good thing! My nana taught me to eat it on crackers and when the crackers were done, to swipe it from the knife until the butter was gone. To paraphrase Julia Child, the three secrets to good cooking are butter, butter and butter! Thanks again. Be well - and "best dishes"! -diane
