Love your recipe for your Beef Tenderloin. I make mine stuff with spinach, parmesean, mozzarella and andiago cheese,fine diced onions, minced garlic and finely chopped Cilantro, then I tie it up with cooking string. After string it up,to form a log, I season it with salt, black pepper(lot because my husband loves black pepper)garlic powder and 1 tsp. of ground cumin. I serve it with baked potatoes, corn on the cob, country green beans, (made with rotel tomatoes, onions,and sliced mushrooms).And Felix's Cornbread and serve it on a bed of cooked no-egg noodles. For dessert, I either make, bread-pudding,Rice pudding or Banana pudding. I am not very big on desserts, but I preferred fresh fruits. Now that I have diabetes and have to taken 4 shots of insulin daily, I use spenda, but instead of desserts, I go for soup and salad to begin with, if I have room, I will try some small portions of vegetable and only 3 oz of meat.

You do not say to turn down the temperature after 425 degrees for 7-10 min. But you say to cook it for 35 minutes for 5lbs. My question is what do you turn the temp down to after the first 7-10 min at 425 degrees? I just love your shows, books and and you. Thank you!

I can hardly wait to cook a pork tenderloin that way. I don't eat beef. But I love pork. My goodness it looks so easy and quick. I am now learning how to cook good food at age 69 Thanks for sharing
