  • 1 box couscous (garlic parmesan), cooked
  • 1 can chick peas
  • 1 red pepper, finely chopped
  • 1/2 Vidalia onion, chopped
  • 1 English cucumber, peeled and seeded, finely chopped
  • 1 tomato, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 to 3 limes, juiced
  • 1/4 cup olive oil
  • 1/2 cup feta cheese, crumbled


In a bowl, add all ingredients. Toss and add oil or lime juice to taste.
