Shrimp Orzo Salad Recipe by Jamie Deen

Ingredients

  • 1 1/2 lbs cooked shrimp, deveined
  • 1 lb orzo, cooked and drained
  • 2 lemons, juiced and zested
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh dill, chopped
  • 3 tablespoons fresh parsley, chopped
  • 1 English cucumber, diced
  • 1/2 cup radishes, thinly sliced

Preparation

Step 1

In a large pot of salted boiling water, add orzo pasta and cook according to directions on box (7-8 minutes).

Step 2

Meanwhile, in a large bowl, add the cucumbers, the zest and juice of 2 lemons, radishes, parsley, dill and shrimp.

Step 3

Drain the orzo, then add to the salad along with olive oil, salt and pepper. Toss well to combine. Serve at room temperature or chilled. Can be served in bibb lettuce cups.

I love recipes w

I love recipes with orzo pasta so glad to see Paula back, but wish she was still on tv too sandy

I haven't tried

I haven't tried the recipe, I am just excited cus a am a subscriber to Paula Deen's Network, I have missed Paula's show on the Food Network, so having this opportunity to see her again in the kitchen thru her network makes me happy and I needed to comment on this. I strongly believe actions against Paula were taken to an extreme high level of unfairness, but anyway in regards to this video in particular, I love it, well explained, recipe seems easy, and cant wait to try it. Wish Paula the best of luck and hope all her supporters will come through. Love you Paula and God Bless!
