Sausage Gravy Fries Recipe by Paula Deen

  • 2 lbs russet potatoes, sliced into 1/4-inch thick discs
  • 1 teaspoon vegetable oil
  • 1 lb loose breakfast sausage
  • 1 red bell pepper, chopped
  • 1 yellow onion, chopped
  • 2 tablespoons butter
  • 1/2 cup flour
  • 3 1/2 cups milk
  • 1 cup cheddar, grated
  • 1 cup sour cream
  • 1 cup fried onions
  • Paula Deen Hot Sauce


Step 1

Preheat fryer to 300° and preheat oven to 200°.

Step 2

Slice potatoes into 1/4” thick discs. Par cook them in 300° oil, remove, then fry again at 375° until golden brown. Place on a paper towel-lined baking sheet then into a 200° oven to keep warm.

Step 3

Warm vegetable oil in a large high-sided skillet over medium-high heat. Add sausage and cook for 5 minutes, or until browned. Add red bell pepper, onion and butter. Cook until vegetables are softened, about 3 minutes.

Step 4

Stir in the flour to coat the sausage and pepper mixture and add salt and pepper. Add the milk slowly, stirring constantly to eliminate any lumps. Stir in 2 cups cheddar cheese.

Step 5

To serve, pour the gravy over the potato discs and top with additional cheese, sour cream, fried onions and Paula Deen Hot Sauce.
