Sweet Potato Bake

Sweet Potato Bake Sweet Potato Bake

Cook Time: 30 min
Difficulty: Easy

Ingredients Add to grocery list

3 cups mashed sweet potatoes
1 cup sugar
1/3 cup butter, melted
2 eggs
1 teaspoon vanilla
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup heavy cream, half and half, or whole milk

1 cup brown sugar
3 tablespoons butter, melted
1/3 cup all-purpose flour
1 cup pecans or walnuts, chopped

Mix together with fork; sprinkle over top of casserole.





Preheat oven to 325 degrees. Mix all ingredients together except for cream. Beat with an electric mixer until smooth. Add cream;mix well. Pour into greased casserole dish ( 1 1/2 quarts). Add topping. Bake for 25 to 30 minutes.

I tried this for the first time on New years Day for my annual meal. I wanted to try somthing different so I thought about a sweet potato cassarole. I found this one while I was online in the store. It was amaxing. I used 4 cups instead of 3 ( by accident... I boiled too many potatos) and also by accident used a whole teaspoon instead of the 1/4 tea it call for. BUT it was SOOO great. My friends and husband raved about it for weeks. Thanks Paula grin

I tried this recipe for the first time this thanksgiving even though my family are not big fans of sweet potato. Well, let me just say that it was the only dish that there was not a drop leftover. My mom couldn't get enough and 3 people asked me for the recipe. I was amazed at how good it came out! I think it would also be great as a dessert. Just follow the recipe and pour into a pie shell. I plan to make it again for our new years eve party.

Paula .... I sure hope you get this message You're a wonderful person And I've always enjoyed watching your cooking shows. I just want to say hang in there as you're going through the trials and tribulations that have come up in the recent past. Christ said, "he who hath not sin, cast the first stone." Sadly there are many stone throwers in this world today who just don't understand God's message. I'm sure if you rely on God and your faith everything will turn out well in the end. As a single father with an autistic boy I can sure tell you that I have experienced plenty of trials and tribulations these past few years.... Way too sweet for a main dish. Also had trouble Browning the crust. It took way longer than recipe says. Won't make this again!
