Old-fashioned Meat Loaf- A.K.A Basic Meatloaf

Ingredients:

1 lb ground beef
1 1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1   egg, lightly beaten
8 ounces canned diced tomatoes (without juice)
1/2 cup quick-cooking oats

Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard

Directions

Preheat oven to 375 degrees F.

Mix all meat loaf ingredients well and place in a baking dish. Shape into a loaf.

Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Yummy! Being a new wife, I really wanted to make something easy (so I don't stress out), but good...this was perfect! My hubby was so excited & proud of me. He said it was better than his grandmother's he had grown up on!

This meat loaf is so good. The topping was a hit. I will make more sauce next time, maybe double. Great as a sandwich with leftovers.

great recipe, easy to follow. not a fan of green peppers so i left them out. didn't take away from the taste in my opinion. the sauce is great, in fact i had to buy a sauce despenser and make extra for my girls to put on other items. great sauce for burgers, chicken, etc.. love you paula

This recipe has been a hit for everyone I have made it for from home to Church. One change I made to it...is instead of plain ole bell peppers... I used the sweet red, orange, and yellow peppers that are put out by a company called Wilson at Sam's Club. We think it just makes it better than good!

This meatloaf was really good, mine usually falls apart but I think this was my best one. I just love the sauce mixture that goes on top.

This is a great Meatloaf recipe. I used 81% lean beef and it was really juicy. I made this recipe twice and I preferred the ground beef with a little more fat. If you like your peppers and onions a little more tender you can saute them a little before adding them to your meat.
