Old-fashioned Meat Loaf - A.K.A Basic Meatloaf

Ingredients:

1 lb ground beef
1 1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1   egg, lightly beaten
8 ounces canned diced tomatoes (without juice)
1/2 cup quick-cooking oats

Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard

Directions

Preheat oven to 375 degrees F.

Mix all meat loaf ingredients well and place in a baking dish. Shape into a loaf.

Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Servings: 4 servings
Prep Time: 10 min
Cook Time: 1 hour

The OLD-FASHIONED Meat Loaf was a HIT!! I didnt have any quick-oats therefore I used bread cumbs...and it still tasted the same!

I found this recipe of Paula's about three years ago and it is now my husbands favorite. He says the topping is the best. I also always make Paula's, Garlic Cheese Biscuits with the meatloaf.....what a fantastic combination. Thank you for sharing all your recipes Paula...your the BEST!!!

My daughter who's 11 hated meatloaf until I found this recipe. Now she LOVES it and requests it. I use the diced tomatoes that have mild green chiles in them to kick up the flavor a bit, and do add a little juice to keep the loaf moist. Love the recipe, love Paula!

My father is 82 years old and now that I use this recipe he now asked for meatloaf. I have to double the topping because a little on the side is so good. I also add bacon on top of the meatloaf then the sauce more sauce.

This is the best meatloaf ever! Serve it with mashed potatoes and you have an awesome southern treat! Never again will meatloaf be a dreaded dinner entree!

This is THE best meatloaf. I was a little afraid of the oats, but it really helped the consistency of the loaf. The topping is sweet and awesome, my son and husband loooved it. Thanks so much for the great meatloaf recipe!

For those who don't like green peppers, use the yellow bell peppers. They are much sweeter. Green peppers are just that....GREEN! We LOVE this recipe! I've tried several, but this is the best!

I have made this recipe 4 times now, and both ways with plain ground beef, and with ground beef,pork,veal. I even shared recipe with my boss's wife and co-workers and they thought it was the Best meatloaf ever! Your girlfriend from South Jersey!

This is truly the best meatloaf I have EVER cooked!! I improvised a little and used 1/2 lb ground turkey and 1/2 lb ground beef. It was absolutely delicious...and so easy to prepare. Thanks Paula!

This is just the very best. It is old fashioned, but fresh -- hard to explain. I used Paula's TV tip of placing pieces of white bread in the baking dish to soak up the juices. It was perfect!

I love the recipe, however, instead of using ground beef, I use ground turkey! Bell peppers don't like me so I leave them out. This is a can't miss good recipe for either ground beef or ground turkey! Thanks Paula!

great recipe, easy to follow. not a fan of green peppers so i left them out. didn't take away from the taste in my opinion. the sauce is great, in fact i had to buy a sauce despenser and make extra for my girls to put on other items. great sauce for burgers, chicken, etc.. love you paula

This recipe has been a hit for everyone I have made it for from home to Church. One change I made to it...is instead of plain ole bell peppers... I used the sweet red, orange, and yellow peppers that are put out by a company called Wilson at Sam's Club. We think it just makes it better than good!

This is a great Meatloaf recipe. I used 81% lean beef and it was really juicy. I made this recipe twice and I preferred the ground beef with a little more fat. If you like your peppers and onions a little more tender you can saute them a little before adding them to your meat.
