Directions

Heat water and margarine to boiling point.  Add flour and stir constantly until mixture is smooth and forms a ball when tested in cold water.  Remove from heat and let cool.  Beat in 4 eggs, one at a time.  Drop dough from teaspoon to form small eclairs onto greased cookie sheet.  Bake at 400 degrees for approximately 30 minutes or until light brown.  Set aside to cool.  Prepare filling by combining milk, sugar, salt and flour; cook slowly until thickens.  Add 3 beaten eggs and continue to cook until mixture is even thicker.  Remove from heat, cool and add vanilla.  With a serrated knife, slice pastry puffs longwise, but not all the way through.  Pipe custard mixture into the center.  Melt chocolate for icing, add sugar and cream.  Cook over medium heat until soft ball stage.  Let cool and beat until smooth.  Ice tops of the eclairs.

Was looking for several recipes and didn't even think to look for them on your sight. Wow, was I surprised about the number of recipes on this sight. Every recipe I looked for was available. I was raised in the south. I didn't know that Brunswick stew ever existed. I lived on North Carolina where I first tasted it. I was hooked. My ex-husband's family made in a cast iron pot outside over a fire. They fixed enough for family members to freeze. I have tried, but not hard enough to find the recipe. I was happy to find (excited} your recipe and some recipes for quiche. I bring something to Sunday School practically every week. I have received many compliments and I enjoy doing it. I know they will absolutely love the quiche recipes (especially the younger ladies who are absolutely in good shape and won't dare eat some of the treats). I believe it is because they don't want other girls to see them. You are so down to earth and so is your family. I have always wanted to visit your restaurant. Maybe I will get a chance to hopefully in the near future. Have a wonder Labor Day. God bless you and your family. You have been blessed by the Lord. Farewell, Renee
