Mama’s Divinity Mama’s Divinity Recipe Courtesy of


Servings: 8 to 10 servings
Prep Time: 45 min

Difficulty: Moderate

Ingredients Add to grocery list

2 cup chopped pecans
1 teaspoon pure vanilla
3   egg whites
3/4 cup cold water
1 cup white corn syrup
4 cup sugar

Directions

In a heavy saucepan over medium heat, stir together the sugar, corn syrup, and water.  Stir only until sugar has dissolved. Do not stir after this point. Cook syrup mixture until it reaches 255 degrees on a candy thermometer, bringing it to a hard ball stage.

While the syrup is cooking, beat the egg whites until stiff peaks form. Once the sugar mixture reaches 255 degrees, carefully pour a slow steady stream of syrup into the stiffly beaten egg whites, beating constantly at high speed. Add the vanilla and continue to beat until mixture holds its shape, approximately 5 minutes.  Stir in pecans.

Using two spoons, drop the divinity onto waxed paper, using one spoon to push the candy off the other.  This may take a little practice because the technique is to twirl the pushing spoon, making the candy look like the top of a soft serve ice cream.  If the candy becomes too stiff, add a few drops of hot water.  You will need to work fast when making this type of candy.

Let sit for 30 minutes and serve.

Since my grandmother passed away, we have not enjoyed a "good" divinity. I could not locate her recipe. I have tried a couple of others, but the were simply "ok" IF they actually turned out. This recipe is wonderful!! I took it to my family's Christmas and had several requests for the recipe. I will make this every year! Thank you!

Thanks for this great recipe! I had always steered clear of making divinity 'cause I heard it was a bit difficult. Followed your instructions to a 'T', and it was perfect. And it wasn't difficult. Just took a little time and it was well worth it.

Paula, is it true that Divinity must be made on a Sunny day? I heard that it won't make on a cloudy day and that you will end up using more ingredients to get it right. I know some recipes I have tried for different things are alo like this.

I've made divinity several times and there's no way that it's ready in 5 minutes of beating after you add the hot syrup. I made it yesterday and it was more like 25 minutes before it held it's shape.

Yikes! Just made this and did something wrong...I now have marshmallow creme with pecans in it! Either I didn't cook it long enough (maybe I need a new candy therometer) or I didn't beat long enough after it was mixed together. What a waste of 4 cups of sugar and 2 cups of pecans!
